|Squash with Quinoa Stuffing
1 1/2 cups qunioa
3 cups water
1/2 tsp. rosemary
2 cloves garlic.
1 1/2 cubes vegan bullion
1/2 yellow onion
1 1/2 large carrots
1/2 cup pine nuts
3/4 cup currents
Cook the first 5 ingredients together, stiring when needed.
saute the onions until translucent, add carrots and cook until almost done remove from heat and toss in currents.
Toast pine nuts in pan until browned.
Mix together and try not to eat too much so the squash is only half full.
Cook squash at 350 for 30-45 min. Remove and fill cavity with stuffing. Continue cooking for about an hour.
