"Fronch" Toast

"fronch" toast from Vegan with a Vengance

I posted this in a comment for someone else, and then realized that everyone would love this recipe, so here you go!
Even my vegan-hating brother loved this stuff--its divine.

'Fronch' Toast:

Loaf of stale baguette
1/2 cup soy creamer (or soymilk or ricemilk..i used soy nog and it was great!)
1/2 cup rice milk or plain soymilk
2 tbsp cornstarch
1/4 cup chickpea flour (i used regular flour)
several tablespoons canola or vegetable oil

Slice bread into 1-inch rounds

Pour soycreamer and soy/rice milk into wide shallow bowl. Mix in the cornstarch and stir until dissolved. Add chickpea flour and mix until it is mostly absorbed; some lumps are ok.

Heat a nonstick skillet over medium/high heat. Add enough oil to create a thin layer on the bottom

Soak the bread slices in the mixture and transfer to the skillet. Cook each side for about 2 minutes, or until golden brown on the bottom. Remove from skillet and serve immediatly.

**Note: I dusted mine with powdered sugar and cinnonmon--which made a big difference

This would make a great dessert or brunchy breakfast <3
