Teriyaki Tofu Salad

1 brick firm tofu, sliced into 8 even pieces and drained
1 garlic clove, minced
1-2 tablespoons olive oil
1/2 cup soy sauce
1/4 cup teriyaki sauce
fresh mixed greens
balsamic vinaigrette dressing

Heat up the oil in a pan on medium heat, toss in the garlic till it's golden, and then throw in the little slabs of drained tofu. Cook for about 5 minutes on each side, or until they're a beautiful golden brown. Then pour in the sauces [I didn't use exact measurements, those are rough estimates..you just want to make sure you don't put in too much teriyaki sauce or else it'll bubble up a lot..use the soy sauce as a thinning liquid]. Cook the tofu in the sauces for about another 5-10 minutes, flipping halfway, until they're a dark pretty brown. Then take them out and set them on a plate with some paper towels to drain and cool slightly. Arrange some mixed greens and tomatoes on a plate, slice the tofu slabs into fourths and plop them on the salad. Drizzle a little bit of the dressing on top, and you're done! This makes about 2 hefty serving and is awesome with a side of hummus and french bread. Healthy and delicious!
