Amazingly yummy pumpkin pie!

I got it from La Dolce Vegan cookbook, and it is to die for. I made it yesterday and my family (who are all non-vegan) and I devoured it within an hour or so.

Topping:
1/4 cup sugar
1/4 cup flour
1/2 tsp ground cinammon
2 tbsp vegan margarine
1/4 cup walnuts or pecans, finely chopped.

Filling:
1 14 oz can unsweetedn pumpkin puree
1/2 cup soymilk
1/4 cup cornstarch
1/2 cup maple syrup
1/2 tsp salt
1/4 cup sugar
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp nutmeg
1 tsp vanilla extract
1 9 inch pie crust (either store bought or you can make it yourself)

Preheat the oven to 375 degrees F. In a small bowl stir together all of the topping ingredients (melting the vegan margarine to make it easier). Set aside to make it easier. In a food processor or blender, blend all the filling ingredients together until smooth. Pour pumpkin mixture into prepared pie crust. Sprinkle topping evenly over the top and bake for 40-45 mins. Remove from oven and let cool. Makes 1 pie. (In the book it says serve at room temperatre, however I think it tastes best if chilled for several hours)
