peach cookies

I'm pretty sure peaches are out of season, but you could probably make these with canned peaches. I had an idea last night and HAD to test it out. These are the results:


5 cups flour
2 cups sugar
3/4 cup vegan margarine (i used Earth Balance)
2 1/2 tsp baking powder
1 cup peach/apple puree

mix all of the dry ingredients in a bowl. mix the peach-apple puree and slightly heated margarine in a separate bowl. (to make the peach apple puree i chopped up a couple of peaches and put them in the blender with apple sauce. but i think theres premade peach applesauce already on the market too). mix the wet and dry ingredients together. put the dough in the freezer for a few minutes if you want to make it more shapeable. while the dough is in the freezer chop up another peach into small chunks. take the dough out of the freezer and mix in the peach chunks. shape. put in the oven.

this makes hella cookies so you can cut the recipe in half if you'd like. i bet this works with other fruit chunks too. yum.
