Vegan Singapore Noodles

Hey. I'm new to the community and haven't posted before, but thought I'd share this recipe, since I've just had it for my tea and it was rather lovely. :) It's adapted from a recipe out of the IKEA Asian Cooking book, of all places. I couldn't find any version of this in the recipe index, but apologies if it's been posted before!



Serves 2, took me about 30 minutes.

Ingredients:

2 sheets noodles
100g Cheatin' Chicken (tofu or seitan would probably work just as well), cut into strips
1/2 teaspoon curry powder
2 tablespoons oil
1 onion, chopped
1 red chilli pepper, sliced
1 red pepper, sliced
1/2 teaspoon chopped fresh ginger
100g chopped leeks
1 tablespoon (or just a good glug) soy sauce
1/2 can chickpeas, drained
1 tablespoon sesame oil

Cook the noodles according to the packet instructions, drain, and set aside. Sprinkle the fake-chicken strips with the curry powder, heat the oil in a wok, and stir-fry for 2-3 minutes. Remove and set aside. Next, stir-fry the pepper, chilli pepper, ginger and onion for 2 minutes. Add the leeks, and stir-fry for a further 2 minutes, then add the soy sauce and stir-fry for another minute. Stir in the noodles a little at a time, until they're mixed in well. Return the fake-chicken strips to the pan, add the chickpeas and sesame oil, and stir until heated through.

Finally, stuff your face. :)
