Black Bean Burgers (need veganizing!)

I copied down this recipe for Black Bean Burgers from the new Bluephies cookbook, New American Cooking: Recipes Your Mom Never Made You. This looks like a good recipe, except for the measly egg.
2 c cooked black beans
1 Tbsp chopped (fresh) cilantro
1 med. red onion, diced
1/2 red pepper, diced
1/2 poblano or green pepper, diced
1 pinch black pepper
1/2 tsp salt
1 tsp cumin
1/2 tsp coriander
1 egg
1 tsp pureed chipotle in adobo
1/8 c cornmeal

How to:
Divide black beans into two equal parts. Add cilantro, onion, peppers, black pepper, salt, garlic, cumin, and coriander. Stir to blend.

Put the other half of the beans in the food processor and puree with egg and chipotle.

Combine the two mixtures in a large bowl. Fold in the cornmeal.

Now make the burgers. Preheat and oil a non-stick pan or flat griddle. Divide bean mixture into 4 equal parts. Shape each burger with your hands until it's 1/2" thick. Cook for about 5 minutes before flipping; once it's flipped, use a spatula to press it down to your desired thickness.
Eat up! (4 servings)

What purpose does the egg serve here? As a binder? There's an egg in my family's usual latke recipe, too. (hmmm...) So what are your thoughts on what to use to replace the egg? Does it need replacing at all?
