soy mayo in baking?

I recently saw soy mayonnaise used in two vegan muffin recipes. I take it that this makes the muffins more moist, but how? what else does it do? could it be substituted for vegan cream cheese when a sweet recipe calls for that (I know the textures are different, but they seem as though they'd serve similar purposes)?

ooh, I have to know. baking science!
