vegan cakes without refined sugar

Applesauce Spice Cake

1/2 cup molasses
1 cup applesauce

Combine and add:
1 3/4 cup wheat flour
1 tsp. cinnamon
1/2 tsp. cloves
2 tsp. powdered ginger
1 tsp. baking powder
1/2 tsp. baking soda

Stir. If too dry, add a little water or more applesauce.
Bake in greased 8" square pan, 350 degrees F. for 30-45 min.

Chocolate Cake

1/2 cup soy margarine [1 stick]
1 T. apple cider vinegar
1 cup soymilk
1 2/3 cups unsifted white all-purpose flour [I think I've done it with whole wheat also]
2/3 cup unsweetened cocoa powder
1 1/2 cups sweetener
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. packed Ener-G Egg Replacer
1/4 cup water
1 tsp. vanilla extract
1/2 cup water

Soften margarine. Put vinegar in a cup and add soymilk. Preheat oven to 350 F. Grease and flour two round layer pans [I use one 13" rectangle; if you "flour" the pan with cocoa powder, it won't leave white on the cake.] Mix well: flour, cocoa, sweetener, soda and salt. Mix egg replacer and 1/4 cup water until smooth. Add margarine, vanilla, soured soymilk, 1/2 cup water, and the mixed egg replacer to the dry ingredients. Beat for 3 min. [I don't have an electric mixer so I just mix it well by hand.] Pour into pans; bake 30-35 min. Let cool 5 min. before removing from pans; let cool completely on rack before frosting [if desired].
