Chamomile Cauliflower Soup

Chamomile Cauliflower Soup

Harmonia introduced this recipe to me. Check it out here:

I had to make some changes so here's what I did.
4 Chamomile Tea Bags
2 Cups of Water
1/2 head of Cauliflower - cut into 3 inch pieces
1 Yukon Gold potatoe
1/4 chopped onion
1/2 cup rice milk
2 celery stalks, chopped
1 T vegan margarine
4 cloves garlic
1 tsp. Tarragon
salt & pepper to taste

Boil water and tea bags for 5 minutes - remove tea bags - squeezing excess liquid into pan (or strain if you're using loose leaf, like me.) Add cauliflower and potatoes to the tea, cover for 15 minutes or until tender. In a small pan, saute the onions, garlic and celery in margarine until onions are clear. Mix together in pot and add rice milk. Put half of the ingredients into blender until smooth. Return to pot and add tarragon and let cook a couple of more minutes.

Result: It was a super plain recipe as it was. Being plain you were able to taste the tea a bit. It's hard for me to let a soup go by without garlic. I like the idea of cooking with tea, it was fun, but I don't think I would do it again. It was a decent base.
