Fly by the Seat of Your Pants Tofu Loaf

Today I did a "Omigod I need groceries what can I make that is in my fridge" dinner.
This is based on the Tofu loaf in the memories.

I didn't actually measure anything (typical of my cooking) but I'll come up with some approximate measurements.

Fly By the Seat of Your Pants Tofu Loaf

I block of extra firm tofu, mashed (approx. 1.5 lbs)
1.5 cup quick cooking oatmeal
1/8 c. flax seeds, ground
I carrot grated and one small onion finely chopped and slightly steamed in the microwave
2 Tbsp chopped cilantro
1 Tbsp dijon mustard
1 Tbsp ketchup
1 Tbsp soy sauce
2 Tbsp olive oil
2 tsp of each ground sage, rosemary, and fennel
1/8 tsp freshly ground pepper
1 tsp sea salt
3 cloves garlic finely chopped

Mix it all up in a big ol' bowl. It will be all crumbly. Slowly add water until the mixture starts getting a little gooey and clumping together. Put in a well greased loaf pan at preheated 350 F oven for about an hour or until golden brown. Let sit for about 20 minutes before turning out onto a plate, otherwise it'll fall to bits. EAT IT!

I'm thinking it's gonna be good leftover on sandwiches or in pitas with sprouts and other good stuffs. For dinner, I served it with squash and a side of rice cooked in vegetable broth.
