Yogurt Muffins

I bought some Stonyfield Farms soy yogurt yesterday at Whole Foods, and I really didn't like it, so I tried to come up with a way to use it up. Muffin time!

Adapted quite heavily from a recipe in "Vive Le Vegan," to the point where it's not really similar - I just needed a starting point. :)

Ingredients:
1.5 cups quick oats
1 cup flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 cup soy/rice milk
1 small container soy yogurt, plain or flavored (I used strawberry)
1/3 cup maple syrup
1/4 cup canola oil
1 tsp vanilla extract
Chips/nuts/dried fruit of your choice (see below)

Directions:

Combine dry ingredients. In a separate bowl, mix the milk, oil, vanilla and maple syrup and then add the yogurt. Stir the wet stuff into the dry stuff. Add the extras of your choice, then bake in a muffin tin at 350 for 15-20 minutes.

I used strawberry yogurt and chocolate chips - dried fruit would have been good, but I didn't have any on hand. The original recipe had all kinds of fun stuff in it - shredded coconut, dates, dried cranberries, flax meal. Use whatever you think would best complement the yogurt flavor. The muffins taste just a little strawberry-y, which is a good flavor to combine with chocolate anyway, so it worked. At any rate, it's a good way to use up flavored soy yogurt that you don't like. :)
