French Onion Soup Gruyere

From Joanne Stepaniak's Uncheese Cookbook:

The Soup

3 large onions, thinly sliced (about 4-5 c.)
1/2 c. water
3 cloves garlic, minced

7 1/2 c. water
1/3 c. tamari/soy sauce
2 tbsp. All-Season Blend*
1/4 tsp. freshly ground black pepper

- Combine first 3 ingredients in a large saucepan/soup kettle. Cover and cook over med-low heat, stirring occasionally, for 45 mins/until onions are tender
- Add more water, if necessary, to stop onions sticking
- Stir in next 4 ingredients and bring to a boil
- Reduce heat, cover and simmer 15 mins.

*All-Season Blend

1 1/2 c. nutritional yeast
3 tbsp. salt
1 tbsp. onion granules
1 tbsp. paprika
2 tbsp. garlic granules
1 tsp. dried parsley
1/2 tsp. turmeric
1/4 tsp. dried thyme
1/4 tsp. dried marjoram
1/4 tsp. ground dill seed

- Place all ingredients in food processor and process until ground sooth
- Store at room temp in covered container
- For broth, combine 1 1/2 tsp. All-Season Blend and 1 c. water in saucepan, bring to boil, simmer 1 min (quantities easily double, triple, and quadruple)

Gruyere Cheese

1 c. water
2 tsbp. lemon juice
2 tbsp. tahini
2 tbsp. nutritional yeast
2 tbsp. quick-cooking rolled oats
4 tbsp. arrowroot/cornstarch [cornflour]
1 1/2 tsp. onion granules
1/4 tsp. salt

6 1/2-inch thick slices toasted French bread
1/4 c. Parmazano*

- Place first 8 ingredients in a blender and process several minutes until oats are finely ground and sauce is smooth
- Pour into saucepan and cook over med heat, stirring constantly until smooth and thick (5-8 mins)
- Cover and set aside
- Place 1 slice of bread in bottom of each of 6 soup bowls
- Ladle soup over bread
- Top with Gruyere and sprinkle with 2 tsp. Parmazano

*Parmazano

1 c. nutritional yeast
1/2 c. raw almonds, blanched and patted dry
1/2 tsp. salt

- Place all ingredients in food processor and blend until almonds very finely ground
- Keep in tightly sealed container in fridge
