4 cups warm tap water (not hot)
2/3 cup non-fat dry milk powder (instant powdered milk)
1/3 cup sugar or 1/4 cup honey
1 packet or 2 1/4 teaspoons dry yeast
1 tablespoon salt
1/3 cup melted margarine or oil
12 cups (approximately) white or whole wheat flour or a combination

Essentially, you use half the yeast you normally would, and let it rise in your oven overnight. It saves time and money, in the end.
That said, I want to veganize it... so what do I do for the non-fat dry milk powder? How essential is that? Seems like the sugar would feed the yeast well enough...
