(for 1 person as a main course)
1 green bell pepper
about 1 cup hummus (I used packaged stuff because I forgot to defrost chickpeas, but it'd be amazing with homemade)
3/4 cup grape tomatoes
a few bits of cauliflower
Cut the pepper into 3-4 pieces (3 will be less messy!) and scrape out the innards. Fill each piece generously with hummus. Toss the tomatoes into a blender (or food processor) and pulse a few times until you have small chunks. Spoon some tomatoes onto each piece, and top with bits of cauliflower (I'm sure this would taste fine without the cauliflower, but it adds another interesting texture and looks pretty). Fit as many olives as you can on top! (I had the container of olives next to me while eating and kept adding more as I went...)
This is super easy to prepare, and looks really nice. It's definitely filling, too -- I wasn't sure it'd be enough, since I was really hungry, but I'm quite full. I bet it would make a great appetizer or party food as well!
