This dish was born of my boredom with boiled greens + a suggestion from a friend who went to culinary school + what I had in my fridge. =Tasty.
1 bunch swiss chard, ripped into medium-sized pieces
1.5 cups cooked chickpeas
1 yellow onion, chopped
1/2 can coconut milk
3-4 cloves garlic
Mince garlic, and if you have a mortar & pestle or a food processor, put it in there. Add the other spices in whatever proportions strike your fancy, or any other curry-ish spices you prefer; I like lots of turmeric, cumin and allspice with dashes of cayenne and cinnamon. Add about a teaspoon of olive oil, and blend/grind/chop until you have something pastelike, or at least until none of the spices are dry.
Heat a few tablespoons of olive oil in a large skillet. Add the onion and sauté for a few minutes, until it starts looking more or less cooked. Add the coconut milk and spice paste and mix thoroughly. Stir in chard and chickpeas. Cook, stirring frequently, until beans are heated through and chard is done to your taste. Dust evenly with salt, and mix well.
Serve hot with warmed pita bread.
