A while ago someone in the cooking community posted a recipe for sesame cookies. And they looked good - but for the fact that I don't use sugar or butter or eggs or regular flour in my cooking.

So I made my own version:
Low Fat Vegan Amaretto Sesame Seed Cookies

Prep time: 20 min; Total time: 40 min


* 3/4 c. applesauce
* 3/4 c. grade B maple syrup (or 1/2 c. sugar and 1/2 c. brown sugar)
* 1/4 c. amaretto (or 1-2 tbsp. almond extract)
* 1/2 tsp. salt
* 2 1/4 c. spelt flour or whole wheat flour
* 1 tsp. baking soda
* 1/2 tsp. baking powder
* 1/3 c. sesame seeds

Preheat the oven to 350 F. Begin mixing applesauce, amaretto, and maple syrup or sugars together. Add salt, flour, baking soda, and baking powder. Mix together until "just mixed."

Roll 2 tbsp. globs of cookie dough into balls, then press them between your hands or use the back of a spoon to flatten them a bit, and dip them in sesame seeds to coat them thoroughly. Place each glob of sesame-coated dough on an ungreased cookie sheet.

Bake for 11-13 minutes.

Makes 20 cookies.

Per cookie: 117.8 calories, 1.4g fat, 2.2g protein, 2.2g fiber, 23.1g carbohydrates, 3.2% RDA calcium, 5.4% RDA iron
