Pancake/ baking mix recipe

I love to buy in bulk, and with some friends am involved in a food buying co-op. I get whole grains, dried beans, flours, etc in 25 lbs increments. One of those friends, Kathy, adapted this recipe from somewhere, and I will always be grateful that she did!

Bulk Pancake Mix (Very hearty!)

30 cups whole wheat flour
15 cups oats
5 tbsp baking soda
1/3 cup baking powder
2 1/2 tbsp salt

I use a big, food safe bucket, put in all the ingredients, then roll it around for a while to mix it. I keep a smaller container full of this mix in my cupboard.

For basic pancakes: For app. 6 servings, mix 5 cups mix with 3 cups soymilk and 1 1/2 cups water. (I actually just eyeball it and add all rice or soy milk.) Add more liquid if needed, it does thicken up when the oats absorb some of the moisture.

For drop scones: I use the mix, add fruit (raisins and cinnamon, grated apples and cinnamon, berries, whatever) and some maple syrup (you could use sugar instead or in addition to), then enough applesauce/ fruit puree/ soymilk as needed to make a dough. Drop by the large spoon full onto a greased cookie sheet, bake at 350 for about 20 minutes, or until bottoms are getting light brown.

I have experimented quite liberally with this mix, with great results! I made heart shaped, rolled scone like things tonight for dessert... I added finely diced cranberries that I've had in my freezer, grated apple, applesauce, cinnamon and maple syrup, rolled them and used a heart shaped cookie cutter, then put walnut pieces on top.
