Roasted Tomato Borlotti Bean Soup

I've been away from this group due to a fabulous summer holiday, but I'm back to LJ and ready to get back to cooking! I concocted this little soup for dinner tonight:

Roasted Tomato Borlotti Bean Soup

1 Can of Borlotti beans, liquid reserved
3 small tomatoes
2 cloves of garlic, chopped
Olive oil, drizzle as desired
A pinch of oregano, for sprinkling
Salt & pepper
2 tsp tomato paste
1 tsp cumin
1/2 tsp coriander
1/4 tsp quality curry powder
1/2 tsp vegetable stock powder
1/4 cup of reserved liquid
1/4 cup of water

Cut tomatoes into 4ths, arrange on lightly oiled baking sheet, drizzle with olive oil and sprinkle with oregano, powdered black pepper and garlic salt. Sprinkle chopped garlic over tomatoes. Put in oven and grill until peel can be separated from fruit, about 15-20 minutes.

After tomatoes have cooled, transfer to blender and add remaining spices, tomato sauce, bean liquid and water. Blend until smooth. Add more water and/or spices if desired.

Heat and enjoy!
