I have some time tonight to make a week's worth of food, but I don't know what to make. I am trying to pack as many nutrients and fibre into a meal as possible because I am lazy - basically I go for the all-in-one meal, hence stew or casserole or soup. I usually make those and freeze portions for the week, but I am out of ideas… soup is getting old too, is there something I can make that's tasty, exciting and fun?
I have: Soy milk A block of silken tofu Half-can of chickpeas Half a butternut squash Broccoli Carrots Can of corn Half a portobello Pasta sauce Lentils
And basic pantry stuff, and minimal spices including curry powder.
