Black Bean Soup, Curry, & Roti Recipes

Here are some of my favorite vegan recipes:

Warzone! Black Bean Soup
Ingredients:
2 tbsp olive oil
1.5 cups of chopped onions
3 cloves of garlic (minced)
1 jalapeño (minced)
10 sun dried tomatoes
1 tsp cumin
28 oz can of diced tomatoes
2 15 oz cans of black beans
1/3 cup water
1 bunch cilantro (well chopped)

Directions:
1) Combine the olive oil, garlic cloves, jalapeño, and onions in a large pot and sauté.
2) In a small pot, boil the sun dried tomatoes for about 10 minutes.
3) Add the cumin, 1/3 cup of water, the juice of the 28 oz tomato can in the large pot, and bring to a boil.
4) Lower the heat, and add in the 2 cans of black beans and the rest of the can of tomatoes.
5) Drain and chop the sun dried tomatoes and add both the cilantro and the (now mushy) sun dried tomatoes.
6) Get out your blender and beat!

Notes: It kind of makes a mess when you use the blender, and personally, my kitchen tends to look like a battle has taken place after I've completed this meal, hence the name of the soup. So soup should look like brown gruel. But don’t worry! It tastes really, really good.

'I canceled a date once to finish this' Curry
Ingredients:
2 cups lentils
1 large onion (chopped)
1 bunch cilantro (well chopped)
1 or 2 large tomatoes (chopped)
1 or 2 red peppers (chopped)
1 can coconut milk
1 medium can of tomato sauce
1 tsp ginger
1 ½ tsp curry powder,1 tsp turmeric, I tsp cumin, ¼ tsp cayenne, a dash of
ground cloves
salt to taste

Directions:
1) Boil lentils with a lot of water in a separate pot for about 40 min, or until they are soft.
2) Sauté onions until golden, then add in cilantro. Gradually add in red peppers and tomatoes, and let them get soft.
3) Add the rest of the ingredients, including spices, and let simmer for about 30 minutes.
4) Add atop rice and eat!

Notes: I usually add in as many tomatoes and red peppers as I have lying around. I tend to add more of the spices than the recipe calls for. Also, adding the salt is very important!


Vegan Roti
Ingredients:
3 cups of flour
1 tbsp soy butter
½ cup of warm milk
1 cup of warm water
1 tbsp sugar
1 tsp salt

Directions:
1) Combine all the ingredients in a large bowl and mix.
2) Take a spoonful, and bake on a frying pan like a pancake. Use some soy butter.

Notes: I usually make this with the curry recipe.
