Creative leftovers!

I had some basmati rice in the fridge, made with coconut milk, turmeric, ginger and garlic, so for lunch I sauteed cauliflower, red pepper and carrots and added the rice. I put peanut sauce on mine, the kids ate it as-is.




For a quick dinner, I steamed some vegetable potstickers (from frozen), baked some teriyaki tofu(just marinated pressed tofu with teriyake sauce, garlic and ginger), and added sliced king trumpet mushrooms to the leftover lunch rice.
