Pita Question?

I made homemade pita bread last night for the first time in years. It tasted great -- but only ONE pita of the 16 made 'puffed' properly during baking (giving it the characteristic 'pocket'), and I don't know what I did differently with it as opposed to all the others. I've had success in the past. What's the secret?
