So I was trying to make some pumpkin pancakes for the wife and I (we went out for brunch to a bistro that offered non-vegan ones and they looked delicious), but I cannot seem to get the formula just right. I can make regular pancakes just fine (I dare say they are my specialty), but these guys are giving me trouble.
Instead of using a banana for egg-replacer, I used pumpkin puree for the binder. I added nutmeg and cinnamon, but I'm sorry to say that they didn't turn out as planned.
Anyone have a vegan "Pumpkin Pancake" recipe they'd like to share?
