non-wheat flours & cooking & making bread

if i want to use non-wheat flours (e.g. oat, kamut, or spelt), can i just substitute it in recipes calling for wheat flour, or will that not work?

i was thinking of making things like bread, biscuits, pastry crusts, etc.. and also using non-wheat flours to thicken sauces.

also, does anyone have a good recipe for a non-wheat bread?

(this is due to my 2-week detox diet.)
