Almond cake w/raspberry & chocolate topping

For Eve, whose birthday was Thursday.

It is: sherrila's vanilla cake recipe, doubled, with
almond extract and 1c almond "flour", and my frosting recipe.
Flowers grown by mom. ;)








Cake
2c unbleached flour
1c almond "flour" (almonds whirred in a food processor until they were Small)
1.5c sugar
2T baking powder
1.5c soymilk
2 eggs (ener-g)
2T+ almond extract
1T+ vanilla

Mixed in that order, and poured into 9" round pans. 350F, 30 minutes.

Frosting
1c margarine
1 package powdered sugar
some vanilla
black raspberry jam & blackberry jam until the colour was right
some soymilk

Electric mixer-ed in that order, then frosted onto cooled cakes.

Icing
Some chocolate chips
Some light corn syrup

Heated on medium heat using the 2 pans/steaming method people use
for melting cocolate. Cooled 5 or 10 minutes, and then spooned into
plastic baggy whose corner was cut so that the chocolate could become
a butterfly.
