1 brick of firm tofu
1 log of GimmeLean vegan sausage
1 package of English muffins
6 slices of soy cheese
3 tablespoons of flour
1/2 teaspoon of garlic salt (or some garlic powder and some salt)
a few cracks of black pepper
a pinch or two of tumeric
Preheat the oven to about 250, or set it on "warm" if you have that option.
Take the tofu brick, stand it up on-end, and slice it into thirds, then cut those thirds in half and drain (so that would be 6 little rectangles).
Cut off six chunks of sausage and try to pat them out to fit the shape of English muffin. Thicker is better (at least to me!). Heat a couple tablespoons of veggie oil in a pan over medium heat and cook the sausage. Drain on a paper towel and stick it in warm oven to keep it.. well.. warm.
On a plate, mix the dry ingredients together evenly. When the tofu is drained to your liking, dredge them through the flour mixture (I actually used soy flour, very tasty and has some extra protein!). Make sure all of the sides are pretty evenly coated. Two at a time, gently lay the tofu patties into the pan (already hot and oiled from cooking the sausage) and just fry it on both sides for a few minutes until the flour gets crispy and it starts to turn a light golden brown. Drain them on some paper towels and add to the sausage pile in the oven until all the tofus are done.
Now, toast the English muffins and assemble! Muffin bottom, sausage, tofu, cheese, muffin top. Beautiful! Since I was the only person eating, I saved the other four sausages and tofus and just heated them up in the microwave at work for breakfast and I gotta say, it was pretty freaking great! I hope someone out here tries this, I promise that you will not regret it! It's become my Saturday afternoon breakfast ritual.
