Mock Cheese Sauce

I adapted this recipe slightly (just to suit my personal tastes) from one I found on VegWeb - the original version is here: http://vegweb.com/index.php?topic=7229.0


Mock Cheese Sauce

- 2 cups water
- 1/4 cup tomato puree (NOT the same thing as tomato paste... alternatively use chopped tomato)
- 1/4 cup raw almonds (blanched OR unblanched)
- 1/4 tsp garlic powder
- 1/4 tsp vegetable stock powder
- 1/2 tsp onion powder
- 1 tsp sea salt
- chili powder to taste
- 1/2 tsp mustard (optional, but it adds "something")
- 1 Tbsp fresh lemon juice
- 2 Tbsp cornstarch or arrowroot
- 1/4 cup nutritional yeast

Grind the almonds into meal in your blender, then add the remaining ingredients and blend until smooth. Pour into a saucepan and cook over medium heat until thick, whisking constantly (at least 5 minutes).

You can omit the chili powder, but I think it gives the sauce a nice kick... you can also add some salsa to make a Mexican-style cheese dip. I like to use dried red chili flakes in place of chili powder. :)


** EDIT **

For those of you who don't have blenders to grind the almonds, you can just use almond meal (aka ground almonds!), and whisk everything together really well (if using chopped tomato, be sure to mash it well). 1/4 cup raw unblanched almonds equals about 1/3 cup meal, when ground in my blender. :)
