this morning i decided to add peanut butter. pretty tasty :)
fluffy peanut butter pancakes
1 1/4 cups flour [ap would work, i used wht spelt, i'd avoid ww]
2-3 tablespoons sugar
two pinches of salt
2 teaspoons baking powder
cinnamon [as much as you'd like! i like a lot]
mix the dry stuff
seperately dissolve/mix one heaping tablespoon of peanut butter into a cup of warm water.
[use more pb if you'd like! its good stuff ;)]
add 1 teaspoon vanilla to mixture.
fold the wet into the dry til well incorporated then add more water as needed til batter is fluffy and desired thin or thickness [i like 'em a little thicker]. batter can be a bit lumpy.
make your pancakes!
one tip for making them, make sure the pan is nonstick and preheated. you shouldn't need oil if it is...but if you do, just a bit. also, cover pancakes when cooking on each side. they cook faster and get fluffier this way :)
