Vegan Garlic Herb Mashed Potatoes - Delicious and Low Fat (relatively speaking)
3 green onions
3 cloves garlic
2 tbsp extra virgin olive oil
1/3 c water
1/2 c fortified soy milk
Salt and pepper
Prick each potato w a fork several times and wrap all 3 potatoes in a dish towel. Microwave potatoes (in the towel) for 5-10 min.
While the potatoes are microwaving, cut the onions into bitesize pieces and put them in a pan with the oil. Heat on medium. Then mince the garlic and add to the pan. Stir occasionally. Once the onions are wilted and the garlic is smelling good but not burnt, remove the pan from the heat.
When you can easily stick a fork into the potatoes, they are done (this was about 8-9 min for me). Put them in a bowl or saucepan and mash with a potato masher. Add water and soymik and mix that in.
Put the garlic, oil, and onion in a food processor or blender and add about 1 c of the potatoes. Blend until the onions are ground into small pieces - but don't overblend. You want bits of herbs visible, not green potatoes.
Then mix the blender potatoes back in with the rest of the potatoes so the herbs get mixed in. Last, add salt/pepper to taste.
Serves 4 with big servings. About 7.5g fat per serving so it's not a diet food per se but it's a helluva lot better for you than the traditional American cream-and-butter version.
