Lentil Dal

Here is the low fat vegan Indian lentil dal soup a friend and I made last night. It was GREAT!

1 c. dried lentils (or 3 c. reconstituted)
1 carrot, chopped
3 ribs celery, chopped
1 onion, chopped
3 cloves garlic, minced
1 tbsp. cumin
1/2 tsp. coriander
1/4 tsp. cayenne (or to taste)
1/2 tsp curry
4 c. veg broth
2 c. water
Salt and pepper
Soy sauce, to taste (about 1/4 c or so)

Soak the beans overnight. Begin cooking the beans however you prefer to do it (I used a pressure cooker and entirely cooked them into mush - whoops).

Then chop your aromatics and heat them in a saucepan on medium heat (carrot, onion, celery, garlic). Add broth once the onions are translucent. Then add beans and spices. Before serving, add soy sauce (add a little, then taste it - you can always add more, but too much tastes pretty gross).

It tasted great, even w/ my mushy beans. Or beany mush, which is really more like it.
