quick Vegan Skillet Dinner


28oz of chopped tomatoes (I used 2 14oz cans)
2 cups water
pour above into a pan and bring to boil

1 cup dry pasta
1 cup reconstituted TVP (I fill a 1c measuring cup about 3/4 full with tvp, and then add water to the top of it,and let it sit till the water is absorbed)
1 14oz can of beans (drained and rinsed)
2 or so Tbsp dry parsley
2 tsp or so Oregano
about 1tsp of anise extract (makes it taste sausage-y)
1tsp fennel seed (rubbed)
dash of dill
dash of cilantro
dash of thyme

Once water and tomatoes boil, add spices, beans, pasta and tvp. Stir. Bring back to boil, cover and turn down heat to simmer. Simmer about 15-20 min's, stirring occasionally. YOu might need to add more water. In the last 5 min's, you can add shredded vegies, or frozen peas/corn etc.

I also added in a scoop of nutritional yeast when I added the beans,etc.

This thing is so quick and fast, and always yummy.
YOu can vary the pasta (shapes work really well) or you can use rice, quinoa or whatever you have instead.

YOu can use anything you have instead of the TVP (crumbled vegan burgers, etc, or seitan or just another kind of bean).
Spices can vary from Italian herbs to taco.

You can melt vegan cheese over it, or stir it in. Vegan parmasean would be excellent on the one I made tonight.
