Mango Chutney Pizza

Here's an easy recipe if you want to use a store-bought crust and store-bought mango chutney. Otherwise, I've included instructions to make it all from scratch. The chutney might not be the most authentic, but the instructions are for how I like it :)

Delicious Vegan Mango Chutney Pizza

Prep time: 15 min; Total time: 30 min

* 1 pizza crust
* 1/2 c. marinara sauce
* 2 mangos, finely chopped
* 1/4 c. raw apple cider vinegar
* 1 tbsp. sugar, brown sugar, date sugar, or sucanat
* 2 tbsp. lime juice (optional)
* 1/4 c. raisins (optional)
* 1 tsp. cinnamon
* 1 jalepeno, minced (optional)
* Salt and fresh ground pepper, to taste

Any pizza tastes best if it is made with a pizza stone. If you have one, place it on the bottom of your oven (or on the bottom rack if the bottom has coils) and heat it to 450 F for 15 minutes. During this time, assemble your pizza.

Begin with your crust. I make my own crust so at this stage it is still raw dough - you may need to adjust your recipe accordingly if you use a ready-made crust (the package should have instructions).

Spread a thick layer of marinara on the pizza.

Last, create the mango chutney. You can also create this earlier and refrigerate it for several hours or overnight to let the flavor develop. Combine mango, vinegar, lime juice, sugar, raisins, cinnamon, and jalepenos. Add salt and pepper to taste. Alternatively, use store-bought mango chutney instead of making your own.

Spread the mango chutney on the top of the pizza.

Bake on the pizza stone for 12-15 minutes at 450 F.
