I made these last night for dinner, and I was hungry as all heck, hence the quick and easy. I had half the veggies and a salad. SO good!
2 large carrots
2 large parsnips
2 red potatoes
1/3 cup spicy BBQ sauce (that measurement's a guess)
2 T agave nectar (That measurement's also a guess)
1. Peel, wash, and cut veggies into large chunks (about 1x2 inch chunks), and place in a 9x9 inch microwave and oven safe glass baking dish (maybe that was a 10x10 dish?) Yay! I pay attention!
2. Preheat oven to 400 F
3. Cover veggies and microwave on high for 5 minutes, stir, and microwave for another 4 to 5 minutes, until "al dente".
4. Pour off *most* of the accumulated liquid, leaving maybe about 2 tablespoons to 1/4 cup. Drizzle on agave nectar and BBQ sauce, lightly toss.
5. Bake for 15 minutes, gently stir/toss, and bake another 5 to 10 minutes.
Yum. Makes 2 to 3 servings as the main attraction, 4 to 6 as a side dish.
