the best vegan mac and cheese you'll ever eat.

Vegan Baked Mac'n'cheese:


1 package noodles of your choice (I've discovered that I really like spelt noodles but I'm partial to normal old semolina noodles for this recipe)
2 tablespoons soy garden or other butter replacement
2 tablespoons flour
2 cups soy milk
one large onion
a handful of mushrooms, the more flavor the better, but I usually just use white
oil for cooking the vegetables
one package follow your heart vegan gourmet mozzarella

First off, I fry up my vegetables while the water is heating up for the noodles. Set them aside. Make a vegan "roux" melting the butter and mixing it with the flour. When it's all nice and consistent, add your milk and stir, stir, stir. Stir until your arm falls off. Add the cheese (except a little bit for the top!) and vegetables once the milk is so thick you can see the bottom of the pan as you stir. Let the cheese melt completely, toss in those noodles, throw it all in a casserole dish, top it with the rest of the cheese, and put it in the oven on broil for a couple minutes. Top with salt and pepper and those red pepper flakes everyone puts on pizza. Eat all of it. Also, it has been suggested to me that some bell peppers would do nicely in this, to offset the mushiness and white color. I'd toss em in at the last minute, so they'd be all crunchy and fresh, but I haven't tried it yet. All sorts of other vegetables would be good, too, especially broccoli, I'd think. Also this recipe makes plenty for two or even three people, and I'm not so fond of the leftovers, it just seems to lose all its creaminess and, I mean, it's good but it's not amazing like right after you make it.
