I don't really like pasta but I wanted pasta but not pasta so I came up with this with inspiration from the fat free vegan blog.
1 chopped zuchinni
4 cloves garlic
1/2 head of cauliflower
rice milk salt, pepper, taragon, and fake parm.
steam carrots and cauliflower and garlic.
pan fry zuchinni on both sides.
When carrots are tender add them to the pan.
Over cook the cauliflour. When it's nice and squishy put it in the blender with the garlic, some rice milk and some spices and blend until as smooth as your blender will allow it.
pour the cauliflower mixture over the crispy zuchini.
