Empanadas de Frijoles Soyas

These delicious soybean patties are always a hit when we have a Mexican Sunday brunch. Not only are they savory and delicious, but they are beautiful as well with the picante, purple onion and avocado slice garnishes. Of course, they are spicy, so I don't recommend this recipe for anyone with any type of stomach affliction. ;-)

I serve these with warm tortillas. Some people like to wrap them up like a burrrito.

2 C. soybeans, cooked and mashed (canned ones are just fine if you drain the juice.)
1 C. cooked brown rice
1/4 chopped organic chilies
enough prepared egg substitute for 2 eggs
1 TBL. cider vinegar
1 C. apple sauce
2 TBL. finely chopped purple onion
1/2 tsp. each of sea salt, red pepper flakes, garlic powerder, celery seed and oregano
2-3 cardamom seeds
2 C. whole wheat breadcrumbs
Lemon slices, chopped onions, salsa picante, pimento slices and avocado slices.

1. In a blender, puree the soybeans, rice, chilies, egg substitute, vinegar and apple sauce.

2. Put the mixture intoa bowl adn add teh onions & seasonings

3. Shape the mixture into small patties and roll them in breadcrumbs

4. Bake at 375F for 45 minutes and garnish with lemon slices.

Serve with bowls of purple onions and salsa picante and strips of pimento.
