Soak some rice noodles in some water.
In a wok, stirfry some chopped onions, chopped green and red bell peppers, chopped mushrooms, chopped carrots, handful of spinach, can of peas, handful of bean sprouts. Stirfry it a bit, and then add the soaked rice noodles.
In another bowl, make the peanut sauce. Add about 1/2 cup peanut butter, 1/2 cup water, 1/3 cup soy sauce, and mix together. Add some chopped garlic, a bit of vinegar and lemon juice. Stir until it's mixed together.
Pour on top of the stir fry, and stir a bit more until well mixed and cooked and heated through. Add some cayenne pepper and cilantro if you wish.
