Saute half an onion in a pan with some oil spray.
Add half a can of coconut milk, and warm it up over medium high heat. Stir constantly.
Add about 1/4 cup raisins, 2 tbsp shredded coconut, and some spices. [I added red pepper, cumin, nutmeg, cinnamon, ginger, sesasme seeds] Stir some more.
Add about 1 1/2 bananas (mine were large) chopped into slices. Reduce heat to medium, stirring more.
Add half a package of cubed extra firm tofu.
You may wish to add some soymilk if the mixture is too thick, as mine was.
Stir until hot and well mixed, but don't overcook it.
Serve with rice.
