I'm about to start making a spinach-y pasta type dish, but it involves goat cheese. I was thinking about just replacing it with tofu. The ingredients are all going to be blended together, so would that be okay? Any spices or flavors I should add to the dish to get the same flavor the goat cheese would make? I've never eaten or smelled goat cheese, so I don't know how different it is from other cheeses.
