Penne with Spinach Sauce

Penne with Spinach Sauce

1 lb whole wheat or multi grain penne
3 garlic cloves (I used 4)
2 oz goat cheese (I used 2 oz frozen and thawed tofu + a little lemon juice)
1 oz cream cheese (I used about 2 oz of Toffuti brand)
3/4 tsp salt
1/2 tsp black pepper
6 oz fresh baby spinach leaves
2 TBSP grated Parmesean cheese (I used Soymage brand, added extra, and also threw in some nutritional yeast)

- Boil pasta in salted water
- Mince garlic in food processor
- Add "goat cheese", cream cheese, salt, pepper, and 3/4 of spinach leaves, blend until creamy
- Meanwhile, place remaining spinach in a large bowl
- Drain pasta, reserving 1 C liquid
- Pour pasta over spinach leaves, and mix in spinach/cheese mixture
- Mix everything together, adding enough of reserved liquid to moisten
- Spinkle with Parmesean cheese and season to taste
