2 cups fresh dates, pitted
1 cup unsweetened shredded coconut
Run through a food processor on 'pulse' until they look sort of thick but creamy. Pull out handfulls (about three tablespoons? Give/take) and roll them into logs about 1 1/2 inches long (or however long you want them, or balls. I mean, I'm sure you could make date balls and it wouldn't be a big deal. You get the idea.), then roll them in the shredded coconut. Refridgerate and, once firmed, devour. They'll last about a week.
these things are insanely addicting, so be warned. i was wondering, however, if anyone knew where in the crap i could get fresh dates from? i live in the south burbs of chicago and i can't seem to find anything other than the dehydrated kind. help?
