for the pie filling, you will need:
1 box of silken firm mori-nu tofu (any soft tofu would probably be fine)
2 tbsp vanilla
2 tbsp chocolate soy milk (or whatever you have on hand)
1 tbsp maple syrup or other liquid sweetener
10-12 oz vegan chocolate chips (i used tropical source)
1 chocolate graham crust (or plain graham, if you prefer..)
blend the first four ingredients in your food processor until creamy. meanwhile, melt the chocolate chips either in a double boiler or, if you're lazy and impatient like me, the microwave. pour the tofu mixture in with the chocolate chips, and stir well. it should be a pudding-like consistency.
then! i love peanut butter, but was still entranced by this wonderful chocolate pudding. soooooo, i mixed..
3 tbsp creamy peanut butter (melted a little bit in the microwave)
2 tbsp powdered sugar
1 tbsp chocolate soy milk (probably optional)
1 tsp vanilla
and added it to the chocolate pudding i had going on. if you choose to do this, too, stir it really well so it doesn't get chunky (my peanut butter kept trying to fuse back together). once all mixed together, the filling was not so chocolatey-rich and kind of tasted like a peanut butter cup.
it looked a little naked, so, i crushed up about 1-2 cups of imitation oreos and sprinkled them on top, and finally, drizzled the whole thing with a batch of this incredible and easy hot fudge sauce.
again, you can choose to be as extravagant or as simple as you prefer; anything after the original chocolate filling was basically optional and you can kind of make it up as you go. extremely adaptable pie recipe, but sooooo gooooooood.
