1 loaf fresh, crusty bread
1 package soft tofu
soy milk (I used about 3/4 cup, I didn't measure exactly)
cinnamon to taste (I used about 1.5 tsp)
cornstarch- about 1 tbsp
Blend the tofu, banana, soy milk, and cinnamon together until smooth. Pour into a bowl and whisk with the cornstarch. Cut bread into thick slices and dip into tofu mixture. Fry at medium heat for about 2 minutes per side, until golden.
Makes about 10 slices.
I topped these with maple syrup and some peaches I fried up with a bit of margarine, cinnamon, and nutmeg. SO GOOD.
