blueberry corn waffles

Blueberry Corn Waffles
(adapted from VwaV)

- 1 1/4 C + 2 T flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 C cornmeal
- 1/4 C vegetable oil
- 2 C soymilk
- 1/4 C blueberry soy yogurt
- 1/4 C sugar
- 1/3 C blueberries, fresh or frozen

Preheat the waffle iron. Sift the flour, baking powder, baking soda, salt, and cornmeal together into a mixing bowl. In another container mix together the oil, soymilk, soy yogurt, and sugar until well combined. Mix together the wet and dry ingredients until just mixed, and then fold in blueberries. Spray waffle iron with cooking spray and ladle in your waffle batter.

Note: I undercooked mine a little because I'm going to freeze them. When I want to eat some waffles I can toast them straight out of the freezer and they'll be perfectly done.
