Cinnamon Swirl Coffee Cake

My nana was famous for bringing this to anything she was invited to. It's fantabulous. Nana even wrote a comment by it in the family cookbook that says, "This is a great coffee cake. Everyone loves it." It's true; everyone loves it. I hope you love it, too.

1/2 c. non-dairy butter-esque substance
1 c. sugar
Egg replacer = 2 eggs
1 t. vanilla
1 c. sour cream
2 c. flour
1 t. baking soda
1 t. baking powder
1/4 t. salt

1/2 c. brown sugar
1/4 c. chopped nuts of choice (I <3 walnuts)
1 t. cinnamon

Preheat oven to 325º.
Cream your "butter" and sugar in a large-ish bowl. Add "egg" and vanilla and blend well. Add dry ingredients alternately with sour cream. (You may want to add a little soy/rice milk to the sour cream.) Spread half the batter into a well greased and floured tube pan (which you of course have lying around) and sprinkle on half the topping. Swirl it all around with a knife like you would do to a marble cake. Add the rest of the batter and layer on topping. Bake for about 45 minutes and bam! it's brunch.
My aunt sometimes throws in some chocolate chips to the batter and it tastes good, but that kills the brunchyness.
