ok, it looks like vomit. a little. but tastes amazing.
this makes enough to serve 1 for dinner then 1 for lunch the next day. I had it with a side of bbq tofu/teriyaki tofu at night and with a luna bar and an apple for lunch.
1/4 onion, chopped
1 Tbs olive oil
1/2 cup rice (I used cheap sushi rice from the asian supermarket, not the expensive arborio rice stuff. whatever, i'm a broke student)
1 and 1/2 cups veggie broth. it's supposed to be warmed but I didn't
1/2 cup frozen peas
2 Tbs bacon bits
a couple spoonfulls vegan sour cream or light mayo or yogurt or cheese (OPTIONAL)
you'll need to do...
mix onion and olive oil in medium-size microwave safe bowl. all your stuff goes into this bowl, so medium means medium!
microwave onion and olive oil for 90 seconds on HIGH.
stir in rice. microwave for 90 seconds on HIGH.
add veggie broth. microwave for 10 minutes on HIGH.
add peas and bacon. the risotto will still look soupy. this is ok.
microwave for 10 minutes on HIGH.
stir in a few Tbs of vegan sour cream, mayo, yogurt or cheese. I add this just to make it a little creamier when I crave that. this risotto is fine without that extra little oomph, it's all a matter of what you want when you want.
sort of fast, you can just throw it in the microwave and zap while you are productive/play with your cat. and there's only a few things to clean rather than a million pots.
