I created the recipe based on the recipes I saw on vegancooking, the french toast recipe my dad and I used to make, and what I had at home.
Here's the recipe I used:
stale bread (about 6 pieces)
1/2 cup plain soy yogurt
1/2 cup soymilk
2 tbsp cornstarch
1/4 cup whole wheat pastry flour
1/4 tsp vanilla
1/2 tsp cinnamon
dash nutmeg and cloves
several tablespoons canola or vegetable oil
Combine soy milk and soy yogurt.
Stir in cornstarch and stir until dissolved.
Stir in flour.
Add spices and vanilla, mix well.
Heat skillet over med/hi heat, coat with a thin layer of oil.
Soak bread in the mixture and transfer to hot skillet, cook until golden brown on each side.
