Sausage Rigatoni

1 package of GimmeLean sausage
1 small can of tomato paste
1 red onion, chopped into strips
Sun-dried tomato vinaigrette
1 package of rigatoni

Cook up the rigatoni while you prepare the sauce. Heat some vegetable oil in a pan over medium heat and add the sausage. Chop/mash it up into small bits and sautee until brown. Then add the onions and tomato paste. It's gonna make a thick mush, so we thin it out with the dressing. I didn't have it, so instead I used some of the oil from a jar of sun-dried tomatoes, and a bit of red wine vinegar, then added a few sprinkles of dried basil and let it all simmer for about 10 minutes, or until the onions are soft. Then, simply toss it with the pasta and serve! I made this with some garlic bread (Smart Balance Light melted in the microwave with some garlic, poured on bread, and stuck under the broiler) and roasted asparagus (cooked at 350 with olive oil, salt, pepper, garlic powder, basil, thyme, and rosemary). It was lovely! I've actually gotten quite a few awesome recipes from the Kraft website. Check it out!

Oh yeah, this makes enough for about..6-8 servings with the sides.
