Nope! These are my grandma's super awesome zucchini pancakes! (r.i.p.)
Here's a list of the full ingredients.. I made just half though.
1 1/4 cups unbleached all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 tbsp sugar or other sweetener
1 1/2 cups soy milk
grated white onion
Now, in a bowl or something with a spout, mix all the dry ingredients together and then add the soy milk. You may want to add a little more depending on how wet it is. Then, stir in about 1/2 cup of grated zucchini (enough for there to be some in every bite, but not taking over the batter) and a small amount of the grated onion (a couple tablespoons or so). Fry up the pancakes in some veggie oil over medium heat and keep them in a warmed oven till they're all done. The end result is a fluffy pancake with a delicate, sweet taste. No syrup needed! Just smear some vegan butter on them and you're good to go! My grandma used to make these all the time at our cottage during the summer and I haven't had them in over 10 years. So I decided to revive the tradition and the recipe! It may sound strange, but I really suggest trying it! It beats blueberries or chocolate chips any day!
